White tea, or Tea of the Emperor, is a real cult and its use became widespread starting from the 17th century. The rare and fine white teas are not fermented and are obtained from the younger leaves picked exclusively in Spring. To better appreciate and enjoy the variety of flavours and aromas of this tea longer, after having taken a hearty sip, it should be "tasted between the teeth" by placing the tongue on the palate and pressing gently, thereby allowing the oxygenation of the infusion.
